BT's Southern BBQ San Diego is proud to announce that we are now BT's Hot Chicken & Ribs. We still have your BBQ favorites and have added Nashville Hot Fried Chicken to the daily menu.

Anecdotal evidence suggests that Hot Fried Chicken goes back generations and legend has it that Nashville resident Thornton Prince III was notorious for his "affairs of the heart," and one of his girlfriends decided that fried chicken with extra cayenne would be the perfect revenge. Unfortunately for her, and fortunately for us, the plan failed. Thornton and his brothers opened their BBQ Chicken Shack Café in 1945 and a true love affair began.

Hot Chicken at BT's started in 2014. While in Seattle for Parker and Jade's wedding Parker's sister Chloe (who was living in Nashville) told me all about Nashville Hot Chicken. A few Google searches, a little fiddling with the recipe, and voila, BT's Hot Chicken was born. It then became BT's Southern BBQ's Wednesday special. The praise was instant and quickly made Wednesdays at BT's the place to be.

As with everything we do we put our own spin on it. We start by smoking the chicken first and then battering and frying it. You then have the option of no hot sauce, hot sauce, extra hot sauce, or "What the Cluck" hot sauce. We also offer a smoked version with the same sauce options for those that don't want their chicken fried. However you decide to order yours, you will be in for an experience that only BT's Hot Chicken & Ribs can provide.

PITMASTER'S STORY

I took over the backyard grilling duties at the age of 15 when our family got tired of the phrase “that’s not burnt, that’s barbecued.” I have always loved cooking and baking, and it became apparent that friends and family loved what I was cooking. Fast-forward a few years and the neighborhood rule was, “if there is smoke coming from my backyard, show up with a 12 pack and join in.” My mom, “JT,” taught me to cook for leftovers, so there was always plenty.

My backyard endeavors turned in to a catering and event company and with enough patrons asking, “where’s your restaurant?” BT’s Southern BBQ Huntington Beach and then San Diego were born.

Here at BT’s our offerings are traditional Memphis style BBQ, dry rubbed and slow smoked which allows the quality of the meat to shine through. Our offerings are what you would expect to find with Pulled Pork, Texas Style Chopped Brisket, Smoked Turkey Breast, Pulled Chicken, and of course the “King of the Smoker”, Baby Back Ribs.

All our meats are slow-smoked for up to 14 hours using hickory to get that deep smoky flavor you expect. We offer homemade sauces so that you can complete your selections for your own unique experience.

All our meats are served a la carte, so you can build the perfect meal. Pick your meat(s), add a side or two if you want, we will add some cornbread, and you’re ready to enjoy.
